How Induction Works

Induction cooktops use electromagnetic coils beneath the glass surface to generate a magnetic field. When magnetic cookware is placed on the zone, an electrical current is induced directly in the base of the pan, generating heat inside the cookware itself. The cooktop glass surface does not heat up significantly — only the pan and its contents do. This makes induction the fastest and most energy-efficient cooktop technology available, with around 85 to 90 percent of energy going directly into the food.

Cookware Compatibility

Induction cooktops only work with cookware that has a magnetic base. To check your existing cookware, hold a fridge magnet to the base of each pot or pan — if it sticks firmly, the cookware is induction compatible. Cast iron, magnetic stainless steel, and cookware labelled induction-compatible all work. Aluminium, copper, glass, and non-magnetic stainless steel do not. Number of Zones

Standard 60 cm induction cooktops have four cooking zones. 90 cm models typically have five zones. Power Management

Many induction cooktops share power across zones — when multiple zones are on at high power simultaneously, the total draw is managed by cycling power between zones. Some premium models include a power management system that maintains full power to all active zones simultaneously. Check the total cooktop power draw (typically 7,200 to 9,000 watts) and confirm your kitchen's electrical circuit can support it. Larger cooktops typically require a dedicated 32-amp or 40-amp circuit installed by a licensed electrician.

Touch Controls

All induction cooktops use touch controls on the glass surface. Look for clear, intuitive controls with a lock function to prevent accidental changes during cooking. Slider or dial-style controls that allow quick, smooth power level adjustments are more convenient for experienced cooks than tap-to-step controls.

Safety Features

  • Residual heat indicators: Display H on the zone when the glass is still hot after use, even though induction doesn't heat the glass significantly — important for safety awareness.
  • Auto shut-off: Automatically turns off a zone if no cookware is detected for a set period.
  • Child lock: Disables all controls to prevent accidental activation.
  • Boil-over detection: Some models detect a boil-over event and pause the zone automatically.

Cleaning

The smooth glass surface wipes clean with a damp cloth. Spills don't bake onto the cool surface during cooking. Use an induction-specific glass cleaner and a soft cloth — avoid abrasive scrubbers that can scratch the surface.

Mid-Range ($500 to $1,200)

Mid-range induction cooktops deliver reliable performance, good zone output, boost modes, and practical safety features. Most households will find an excellent model in this range.

Is induction safe to use near a pacemaker?
